Actually, last month I did exactly that: I checked with a physician before starting a similar diet to what the OP described. His advise to me was:
1) Take it slow
2) You may need to take a Vitamin B12 supplement because that is the only nutrient not present in plants. (another physician also suggested a calcium and magnesium supplement — although the first did not think that was necessary)
3) Check back in 6 months a let me know how it’s going.
Both physicians confirmed that animal products are neither necessary nor a healthy part of our diet.
To the OP:
You are venturing into the hardest most challenging aspect of living a vegan life: Leaving your home and entering our carnivore based society. You will get little or no support and you will pretty much have to fend for yourself.
But as to what to take: We need more information. Will you be carrying everything on your bike? Will you have storage, cooking or refrigeration facilities available?
But, one option is: Bean soup made with: prepackaged vegetable stock (the stuff that comes in the cardboard box), dried beans and whole wheat pasta — also use garlic and onion for flavoring. If you have them, throw in some veges too… All the ingredients will store for months and be both filling as well as nutritious. Another option would be a sweet potatoe (or pumpkin) lentil soup made with the same vegetable stock. Again all the ingredients store well, it is filling and nutritious. Or, even just grilled or baked sweet potatoes: for grilling, simply cut them in 1/4 inch rounds and throw them on a grill and baste with maple syrup and lime juice. Beets are good that way too.
For snacking: granola bars (you might have to make them yourself as most commercial ones have nuts in them). Also, dried fruit and dried veges (but watch the commercial packages as they tend to have oil in them). Also, apples will keep well and make a good snack. Carrots. Packaged dates and raisons…
